Description

This cookie recipe does not use baking powder or baking soda.

Note

1) I used half atta and half maida. can be made entirely with atta or maida.
2) All ingredients should be at room temperature.
3) Will keep in an airtight container for about 18 days.

240  Gm.sFlour (all purpose flour)
110  Gm.sCaster sugar
200  Gm.sButter, unsalted

Method

1) Whisk together butter and sugar till it's soft and creamy & fluffy for about 3 minutes.
2) Add in flour with salt , little by little, mixing in gently till the whole flour is incorporated. Do not mix in for too long or else cookies will be hard.
3) Pre heat oven at 175 degree Celsius for 10 minutes.
4) Take 1 tbsp of dough and roll them on tje palm of your hands and flatten slightly. Do not flatten too much as cookies will spread while baking.
5) Keep the cookies on a baking tray lined with butter paper.
6) At this stage you can make design on cookies using fork or knife. Be gentle while doing it.
7) Bake for about 20 minutes till the sides of cookies start to brown. Start checking after about 15 minutes as temperature may vary depending on oven.
8) When cookies are done, remove tray and keep on cooloing rack. At this stage cookies will be soft. So do not try to remove cookies until it has cooled down completely.
