Description

These thumb print cookies are similar to Swedish Hallongrottor cookies.The name means raspberry cave in Swedish. The cookies are similar to shortbread cookies with an added jam filling. In Sweden raspberry jam is used for filling. You can use any jam of your choice. These cookies do not use baking powder or soda.

Note

1) If using vanilla extract use only 1/4 tsp.
2) I used mixed berry jam.

100  Gms.Butter,unsalted, softened
65  CupCaster sugar
1  No.Egg yolk
1  Tsp.Vanilla essence
1  PinchSalt
175  Gm.sAll purpose flour / maida
6  Tbsp.Jam

Method

1) Mix butter with sugar. Whisk till soft and creamy.
2) To butter sugar mix, add egg yolk. Mix again.
3) Add salt and vanilla essence. Continue whisking.
4) Sift in all purpose flour, gradually to butter mix. Do not add all together in one go, incorporate little by little till the whole thing forms a smooth dough. Let the dough rest for about 20 minutes. After resting time,the cookie dough should not stick on your fingers. If it sticks, add a wee bit more of all purpose flour.
5) Pinch out small balls of dough, and flatten it lightly. I used a tablespon to measure out dough. This will ensure uniformity in size.
6) Keep the shaped cookies in a butter paper lined tray leaving some space in between.
7) Now either with your thumb pr with a small tsp. make a small depression in the middle of the cookie. Do not go all the way to make a hole.
8) If the jam is not smooth, add a bit of boiled water and smoothen jam. Fill the depression in cookies with the jam.
9) Tap the baking tray to even out the jam.
10) Bake in a pre heated oven for about 12 to 14 minutes. Each oven is different, so start checking after 10 minutes to see if cookies are done.
15) Immediately after baking, cookies are soft and hot, so wait till it cools down. Then dust with sugar.

Serve with milk or tea/coffee.
