In most homes in Kerala, hoppers / appam is almost always accompanied by Egg roast. There are different variations for egg roast. This is one of the easiest version for those busy mornings.
1) Coconut oil can be substituted with any other oil of your choice.

2 Tsp. | Fennel | |
1 Tsp. | Chilli powder | |
1 Tsp. | Kashmiri chilli powder | |
1 Pinch | Turmeric powder | |
Salt to taste |
1) Grind all ingredients given under 'To grind' to a fine paste, without water .
2) Heat coconut oil. Fry curry leaves.
3) Add ground masala paste & saute till raw smell goes.
4) Make slits on boiled eggs and add to gravy and let it cook for 3 to 4 minutes,
Can be served with hoppers, string hoppers, bread, chapathy etc.
