Ketchup or catsup is a table sauce with a sweet and tangy flavor. "Ketchup" now typically refers to tomato ketchup.
Tomato ketchup is made from tomatoes, sugar, and vinegar, with seasonings and spices.
1) Beetroot is added for color.
2) Sodium benzoate and acetic acid is used as preservatives without which ketchup will spoil in 2 days.

1) Wash and chop tomatoes.
2) Add tomatoes, garlic, ginger, cardamom, clove and cinnamon together and cook on a slow fire till thick and tender.
3) When cool, blend in a blender.
4) Pass this through a sieve.
5) To the strained liquid, add vinegar, salt, chilli powder and sugar. cook this on a low flame till thick.
6) Add acetic acid. Remove from fire.
7) Mix sodium benzoate in little boiled and cooled water. Add this to the ketchup when ketchup is cool.
8) Bottle ketchup in sterlized bottles. When stored propery in fridge, can be kept for a year.
Serve as an accompaniment with meat dishes and also in sandwiches. In India it is commonly used with veg and non veg cutlets.
And the whole world cannot think eating french fries without ketchup.
