Kothimbir is corriander leaves in Marathi and vadi is slice. Kothimbir vadi is a maharashtrian snack which is savory in taste and is either shallow or deep fried. There are slight variations in the ingredients used from household to household. But the key ingredients remain the same.Here i have used gram flour and a little qty of rice flour.
1) You can either increase or decrease the qty of chilli according to your tolerance level.

2 Tsp. | Cumin dry roasted & powdered |
1.5 Cup | Gram flour/ chick pea flour |
0.75 Cup | Rice flour |
0.5 Tsp. | Asafoetida powder |
2 Tsp. | Sesame seeds |

1 Cup | Oil for frying |
1) Roast peanuts and crush coarsely.
2) Mix all the ingredients together.
3) Form the mixed dough either into a cylinderical shape and keep in a plate brushed with oil and steam for 10 minutes. Alternatively brush a cake tin or any vessel with oil & steam. Check if its cooked by inserting a toothpick or skewer. if it comes
4) Let it cool. Cut into desired shapes.
5) Heat oil and deep fry the cut pieces. Or you can shallow fry in little oil.
6) If trying to avoid oil, cut into shapes. Heat 2 tbsp.oil . splutter mustard seeds, add asafoetida and curry leaves. Pour over kothimbir vadi.
Serve hot with either tomato ketchup, curd, green chutney or dates chutney.
