Carrot dates cake is soft and moist cake.
1) Adding walnuts is optional. Toasted walnuts give a good crunch.
2) Icing sugar should always be added in through a sieve as it will be lumpy.
3) For toasting walnuts, add walnuts in a pan, without oil, and stir fry till a nice aroma comes. Try not to burn.

Cream cheese frosting | ||
100 Gms. | Butter,unsalted, softened | |
70 Gms. | Cream cheese | |
1 Cup | Icing sugar / confectioners sugar | |
0.5 Tsp. | Vanilla essence | |

1) Pre heat oven at 180 degree celsius.
2) Mix dates with honey & keep aside for atleast 1 hour.
3) Line a 10 inch cake tin.
4) Mix all dry ingredients & sieve thrice.
5) In another bowl, add oil & brown sugar and beat well.
6) Add eggs, one by one & beat well.
7) Add vanilla essence.Mix in well.
8) Now add in grated carrot & fold in.
9) Add dates with honey & fold in.
10) Now add in dry ingredients to this gradually, folding in between each addition.
11) Add in walnuts. Fold in gently.
12) Pour the prepared batter into the cake tin.
13) Bake at 180 degree Celsius for 30 to 35 minutes. Start checking after 25 minutes. If an inserted toothpick or skewer comes out clean.
Cream cheese frosting:-
1) In a bowl, add softened butter. Beat well.
2) Add in icing sugar through a sieve. Beat well to get a soft smooth consistency.
3) Add a pinch of salt & vanilla essence and beat again.
4) Now add in cream cheese. beat to form a smooth consistency. Don't beat for too long, it'll split.
5) Keep the frosting in fridge to form up.
Assembling:-
1) After cake cools down, spread the cream cheese frosting on top.
Serve with tea chilled. Cream cheese frosting is best served slightly chilled.
