Pink sauce pasta is actually pasta dish modified to suit indian taste.
1) Here i have used penne as sauce will get into the tubular hollowness giving more saucy taste. You can use any pasta of your choice.
2) I used kashmiri chilli powder, which is only mildly spicy. You can add hot chilli powder.
3) I cook pasta till it's done and not al dente as Italians.

To puree tomato:-
1) Make a cross at the bottom of tomatoes and add to boiling water. When skin starts peeling, remove and put in cold water. Peel off skin and chop & deseed. Puree in a blender. Keep aside.
To boil pasta:-
1) In a heavy pan, add lots of warer and lots of salt and the olive oil. The water should taste like sea. As water is drained out pasta will not be salty. Cook till pasta is 90%done. Don't over cook pasta.
2) Strain pasta. Reserve the water as we may need it. Do not wash pasta in water as it will drain away the starch.
3) Add some olive oil to the pasta to prevent sticking.
To make sauce:-
1) Heat oil and butter together.
2) Add garlic and let it brown.
3) Add oregano, basil and thyme.
4) Add onion nd and saute till transparent.
5) Add chilli powder and chilli flakes.
6) Add tomato puree and salt to taste. Let it cook till raw smell of tomato goes and the sauce is well done.
7) Add pasta & fresh cream and 1/2 cup pasta water. mix and let it come to a simmer.
8) Garnish with cheese. Serve hot
Serve hot as a full meal.
