Description

This is a buttery soft cake which can be served as it is or with ice cream.
This cake does not use any rising agent. The cake tastes good without glaze too.

Note

1) Take only the orange colored skin , not the white pith of orange. White pith will make it bitter.
2) Use fresh orange juice.
3) I had used Indian kinoo oranges, the flavor of which was soo orangey. Those oranges had a beautiful orangish color.
4) Use the best oranges available.

Method

1) Pre heat oven to 170 degree C.
2) Grease and butter an 8 or 7 inch cake tin. Spread butter or parchment paper. Cut and keep butter paper at the edge of the cake tin, covering the whole round of the tin.
3) Cream butter and sugar together with a hand mixer or stand mixer. Cream for about 3 minutes. It should be fluffy.
4) Add in eggs, one at a time, creaming after each addition.
5) Add in vanilla and orange zest.
6) Gently, with a spatula, fold in flour , adding little by little.
7) Add in orange juice, mixing it in with light hands- use a spatula.
8) Pour the batter into the cake tin, tap well. Spread with a spatula to flatten the top.
9) Bake in the pre-heated oven for about 40 to 50 minutes. Start checking after 40 minutes with a skewer. If the skewer comes out clean, remove the cake. Cool the cake on a stand. Remove cake from tin after it has been cooled for about 30 minutes. Glaze while still warm.
For glaze:-
1) Whisk all ingredients together .
2) Pour over the cake.

Serving Suggestions

Serve either warm or at room temperature with or without ice cream.
