This lime pickle is made using only green chillies and no chilli powder.

| 10 No.s | Dates, deseeded and sliced |
| 1 Tbsp. | Ginger sliced |
| 1 Tbsp. | Garlic sliced |
| 6 No.s | Green chilli slit |
| 1 Sprig | Curry leaves |
| 3 Tbsp. | Gingelly / sesame oil |
| 0.25 Tsp. | Turmeric powder |
| 0.25 Tsp. | Asafoetida, powder |
| 0.25 Cup | Water,boiling hot (approximate) |
| 1 Tsp. | Sugar |
| 1 Tsp. | Mustard |
| 0.25 Tsp. | Fenugreek seeds |
| Salt to taste |
1) Wash and immerse lime in boiling hot water for an hour. this will soften the limes.
2) Remove and wipe after 1 hour to remove all moisture.
3) Cut each lime into 4 pieces.
4) Deseed dates and cut into 4.
5) Heat gingelly oil.
6) Splutter mustard.
7) Then splutter fenugreek seeds.
8) Add ginger, garlic and curry leaves. Saute till ginger & garlic are soft.
9) Add turmeric powder & asafoetida .
10) Add lime,dates and salt to taste. Mix well.
11) Add boiling hot water & sugar. Let everything come to a boil.
12) Cool and bottle. Can be used after 1 week of maturing.
Serve after 1 week with rice.
