In India yoghurt and buttermilk drinks are very popular, specially during summers. Both North and South india have their own variations. In lassi most often milk cream churned from curd or yoghurt is added. Lassi can be salty or sweet. Usually lassi which is sweet is served in Punjab, India.
1) Increase or decrease sugar according to your preference and also the sourness of the curd.
2) A healthier option, according to Ayurveda will be to blend the yoghurt to remove cream. So it's easily digestible.
3) Use good quality saffron.
4) Use dairy cream and not non-dairy whipping cream.

1) Soak saffron strands in warm milk. Milk will turn to a nice color after about 30 minutes.
2) Blend yoghurt with sugar to a smooth consistency and also to dissolve sugar.
3) Add cardamom, saffron milk with strands and ice to yoghurt and blend to froth well.
4) Pour into tall glasses. Garnish with pista and cream (if using).
Serve immediately. Always serve cold.
