This is a very colorful rice dish and a very good way for eating beetroots, specially for children.
1) Do not overcook rice.

1 Cup | Beetroot, grated |
2 Tsp. | Ghee (clarified butter) |
1 Tsp. | Pepper powder |
2 Tsp. | Ginger - garlic paste |
0.5 Tsp. | Green chillies finely chopped |
1 Pinch | Turmeric powder |
0.25 Tsp. | Mustard |
1 Tsp. | Black gram dal |
Salt to taste | |
1 Pinch | Garam masala powder |
1 Pinch | Asafoetida |
1 Tbsp. | Corriander leaves chopped fine |
1) Heat ghee/clarified butter.
2) Splutter mustard and black gram dal.
3) When dal turns golden, add ginger-garlic paste and green chilli & saute till it slightly turns color.
4) Add beetroot & saute till it's cooked.
5) Now add asafoetida, turmeric pwdr, pepper powder and garam masala powder.
6) Add cooked rice and salt to taste. Toss well without breaking rice.
7) Remove from fire and add corriander leaves.
Serve hot with a raita or any salad.
