Description

Porotta is a flat layered flaky bread commonly made with all purpose flour. These days due to health consciousness porotta is being made with wholewheat flour. Whether made with all purpose flour or whole wheat, porotta is not considered healthy. However porotta nad beef curry is jokingly called the state dish of Kerala as it is very popular & cheap.
"kothu", the malayalam word means to cut. Hence the name,kothu porotta. Usually street side vendors usually keep on cutting the porotta with 2 sharp metal spatulas, after adding to egg.

Note

1) Here we have used Malabari porotta which has layers and is flaky. As opposed to North indian paratha, Malabari porotta is not stuffed.
2) We have used whole wheat porottas. Cooked or half cooked porottas are available in supermarkets.

  Servings 

Method

1) Cut porotta into small bite size pieces.
2) Heat oil. Splutter fennel.
3) Fry onion till almost brown.
4) Add crushed ginger, garlic and green chilly. Fry well.
5) Now add turmeric, chilli, corriander and garam masala powder.
6) Add in tomatoes and fry till well done and pulpy. Adjust salt
7) Add beaten eggs and fry lightly, scrambling. Before eggs are fully cooked, add porotta pieces and keep on stirring with a sharp spatula.
8) When everything is mixed well, add corriander leaves and onion chopped finely.

Serving Suggestions

Serve hot with pickle & curd based salad as a full meal. Add a dash of lime juice before eating.
