Beef/ buffalo is a very popular meat in Kerala, specially among christians. This meat is used in various forms in various dishes & cutlet is one of them. In certain European countries, cutlet is a piece of meat from a particular body part of the animal. In other parts of the world, it is a flat croquette/ pattice of minced meat, vegetables, spices etc & typically covered in breadcrumbs and shallow fried.
1) These cutlets can be made till the last stage(ie; before frying) & frozen in an airtight container and can be kept for about 3 weeks. Bring to room temperature before frying.

1) Boil potatoes. when slightly warm, grate or mash without lumps. keep aside.
2) Cook meat with ingredients given under 'to cook beef'. I did in a pressure cooker for about 12 minutes on low flame after 1st whistle. You need not add water. Bring to a boil on low heat, water will ooze out and then put on lid and when steam comes out put on weight. cook only till 3/4th done.If cooking in a pot you should add water and cook till 3/4th done.
3) When beef cools down, shred the meat in a blender without the stock/water. Do not grind to a fine paste, only shreds using pulse method.
4) Heat coconut oil to saute. Add all the ingredients, except powders, given under 'saute' till onion is light brown. Add powders and after it's fried, add beef and saute well till nicely done.
5) Keep aside to cool. When cool, add potato and mix well.
6) Take small balls, shape into rounds or oval.
7) Beat egg whites.
8) Spread bread crumbs on a plate.
9) Dip cutlets in egg white, roll in bread crumbs.
10) Heat coconut oil. Fry cutlets till golden brown on both sides.
Can be served as an accompaniment to drinks, starter or as a side dish with rice. Usually served with an onion salad and ketchup.
