Description

Dulce de Leche (pronounced 'dool-say day lay-chay). Simply put it is caramelized condensed milk. Condensed milk is thick sweetened milk. It is available in tins in super markets. Dulce de Lechay is used as dessert topping , in cakes, brownies or spread on bread or eaten as it is. Sometimes Dulce de Leche is mistaken for caramel. The main difference between these two is that dulce de leche is made from condensed milk (or milk and sugar) whereas caramel is made from sugar and water.

Note

1) Remove plastic parts from condensed milk tin before adding to cooker.
2) This is the easiest method to make. Making Dulce de Leche in a saucepan is tedious and time consuming.

Method

1) Fill a pressure cooker (6 to 8 litres) halfway with water.
2) Remove plastic lid from condensed milk tin, if any. Add the unopened tin to cooker. Let steam come through the vent of the cooker. Put on cooker-weight. Let one whistle come through the cooker. Reduce flame to low and cook for 15 to 18 minutes.
3) Put off fire. Let cooker cool on it's own.
4) Open cooker nad remove tin and keep the tin aside to cool.
5) Once the tin is cold, open and use it or store in an airtight bottle in fridge after contents have cooled down. Will keep in the fridge for about a month.
