Bitter gourd, also known as bitter melon, is among the most bitter of all vegetables. . The fruit has warty exterior and is longish in shape. Inside of the fruit has seeds and pith. Seeds, exterior of gourd and pith turn red after the gourds ripe. Usually this vegetable is used in it's raw form. Bitter gourd is highly valued for it's medicinal benefits. Bittergourd ,specially juice is considered good for diabates.
1) The chips will take time to fry and crisp up.
2) These chips drink up a lot of oil. So it will be good, if it can be kept it in the sun till it slightly wilts. Then mix in all ingredients and proceed. In that case, if bitter gourd is dry, slightly sprinkle few drops of water.

1) Cut bittergourd into roundels. Slices should be almost uniform. Can use a slicer to cut.
2) Add to it all ingredients, except oil. Mix well.
3) heat oil.
4) Fry curry leaves and green chillies till crisp. Keep aside.
5) In the same oil, fry bittergourd in batches, till crisp and brown in color.
6) garnish with curry leaves and chillies.
7) When cool, can be stored in an airtight container.
Serve as a crispy accompaniment to rice. Or can be had as a snack.
