Upma or Uppumavu or Uppittu is a popular breakfast dish, usually cooked with dry roasted semolina. In South Indian languages, 'Uppu' means Salt and 'Mavu' or 'Hittu' means flour. In North India, it is called Upma, short-form for Uppumavu.These days different types of upma, like, corn, wheat, bread etc. are made.
1) You can either buy roasted semolina, or buy unroasted one and dry roast (without oil) or upma will turn mushy.
2) This version uses grated coconut . Some people do not use coconut.

2 Tsp. | Ghee (clarified butter) |
2 Tbsp. | Corriander leaves chopped fine |
1) Heat oil.
2) Splutter mustard and add red chilly.
3) Then add black gram dal & cashew. Fry till both are brown.
4) Now add onion, green chilli, ginger & carrot. Fry till onion is transparent. Add required salt.
5) Add semolina & stir lightly.
6) Add boiling water & salt to taste.Lower flame to the lowest. Immediately put on a lid and let it cook for about 5 to 8 minutes.
7) Switch off fire. Add ghee & coconut. Mix well. Keep with lid on for about 5 minutes more.
8) Garnish with corriander leaves.
Serve with steamed banana or with chutney.
