Description

Ladies fingers, also known as Okra is a long slender finger like vegetable, having a small tapering tip at the end. This vegetable, when cut has some sliminess (stickiness) to it.
This a tasty semi gravy dish.

Note

1) The cream used here is dairy cream and not non-dairy whipping cream.

  Servings 

Method

1) Clean and then trim top and tail of ladysfingers. Dry with a kitchen towel. Cut into 1 inch pieces.
2) Heat oil for frying okra. Fry till okra is cooked, stirring in between. When it is half cooked, add salt and continue stir frying. Keep aside.
3) To the same pan, add oil and add onions and fry till almost golden.
4) Then add ginger garlic paste and continue frying till ginger and garlic is fried well.
5) Add chilli, corriander and turmeric powders.
Fry till done.
6) Add tomatoes and cook till tomatoes are done.
7) Now add cumin powder and dry mango powder. Mix well.
8) Crush fenugreek leaves with hands and add to the gravy.
9) Add fried okra and salt to taste. Mix well, so that okra is coated with the masala.
10) Lastly add cream and mix and adjust salt.

Serving Suggestions

Serve hot with chapathy or rice.
