Description

Eggs cooked with mango in coconut milk is a speciality of Thrissur, in Kerala. The mild sweetness of coconut milk is off set by the slight tanginess of the mango.

Note

1) Depending on the sourness, increase or decrease mango pieces.

1  Tsp.Ginger crushed
1  Tsp.Shallots crushed
1  Tsp.Chilli powder
1  Tsp.Corrian der powder
0.25  Tsp.Turmeric powder
  Salt to taste
1  SprigCurry leaves
0.5  CupCoconut milk (thick)
1  CupCoconut milk (2nd extract)
1  No.Green chillies (slit)
Tempering
1  Tbsp.Coconut oil
1  Tbsp.Shallots, sliced
1  SprigCurry leaves

Method

1) Boil eggs. Peel shell. Cut each egg into 2 pieces.
2) Mix shallots crushed, ginger, chilli, turmeric, chilli and corriander powders together.
3) Add mango slicesand salt to this and mix well.
4) To this add 2nd extract coconut milk and keep to cook. Boil and cook till mango is done.
5) Now add eggs and let it come to a boil.
6) Add thick coconut milk. let it just come to a simmer.
7) To temper,heat coconut oil.
8) Add shallots and curry leaves and fry till shallots are golden brown in color. pour this over curry. Keep closed till serving time.

Serving Suggestions

Can be served with rice, puttu(steamed rice cakes), idiappam(string hoppers) or appam(hoppers). If serving with anything else other than rice, decrease mango.
