Description

Green gram is native to India. The beans are small, and green in colour. They are generally eaten either whole (with or without skin) or as bean sprouts in salads. In India it is used in savory and sweet form. It is a source of protein and dietary fibre and is also easily digestible.
Cherupayar ularthiyathu is a good combination with kanji(rice gruel). In a lot of Kerala homes,dinner consists of rice gruei and stir fried green gram.

Ayurvedic Note

1) Ideal dish, rich in protein, vitamins and carbohydrate.
2) As it is easy to digest, ideal food during fever and indigestion.
3) Reduces acid reflux.
4) Ideal for all body constitution- vata, pitta and kapha.
5) Green gram soup gives immediate relief from acidity.

Note

1) If you have not soaked green gram overnight, atleast soak them for 4 or 5 hours.
2) I usually add turmeric with crushed shallot and garlic. But care should be taken not to burn the spice.
3) This is only mildly spicy, increase or decrease chilli flakes according to your tolerance level.
4) If you do not have chilli flakes, just coarsely crush some whole chillies in a blender.
5) While adding chilli flakes, be careful not to burn, chillies cook fast. So stir fry and immediately add coconut.
6) Chilly should be fried before adding coconut, as coconut is a wet ingredient, chillies will not further cook.

0.5  CupCoconut, grated
1  Tbsp.Coconut oil
1  Tbsp.Shallot, chopped
  Salt to taste
2  SprigsCurry leaves
1  Tbsp.Garlic ,chopped

Method

1) Cook green gram with salt till it just splits open. If using a pressure cooker, add salt and approximately 1 cup water and just cook for 2 whistles. Let pressure drop on it's own.
2) Crush shallots and garlic . Mortar and pestle is ideal for crushing. In the absence of mortar and pestle, just coarsely crush in a blender.
3) Heat coconut oil.
4) Add curry leaves and crushed shallot and garlic. fry till goldenbrown.
5) Add turmeric powder and chilli flakes. fry chilli flakes.
6) Add coconut grated and just stir fry.
7) Now add cooked gram. Stir and mix well. Adjust salt.

Serving Suggestions

Serve with rice gruel.
