Description

This is a no bake cream cheese, made with home made cream cheese. Gelatine is used to set the cheese cake. Vegetarians can use agar agar/ china grass to set the cake.

Note

1) I used gelatine to set the cheese cake. Vegetarians can substitute it with agar agar/ china grass.
2) Here i have used fresh strawberry puree, you can use puree from frozen berries.
3) For cream cheese recipe, refer Cream cheese-homemade in' Basics' category.
4) Use any type of biscuits like glucose, graham crackers, or any chocolate biscuit. Do not use cream sandwiched biscuits.
5) If you do not have springform tin, line a normal cake tin with double layer cling film. The cling film edges should stand out from the tin. This helps in gently lifting out the cheese cake into a serving plate after it is set.

4  Tbsp.Strawberry sauce

Method

For base:-
1) Melt butter and keep aside.
2) Crush the biscuits to a coarse powder.
3) Add melted butter to crushed biscuits and process again till it looks like sand particles.
4) Press the biscuit mixture to an 8 inch spring form tin. Press tightly with the knuckles of your hand. Refrigerate this till you do the filling.
For Filling:-
1) Combine cream cheese, cream and sugar together till well mixed. Keep in the fridge till used.
2) Add gelatine to hot water and stir till it dissolves completely.
3) Add strawberry puree to the melted gelatine.
4) Add gelatine-strawberry mix to the cream cheese-cream mix. Stir very gently until well combined.
5) Pour this filling mixture on top of biscuit mixture.
6) Let the whole thing set in the fridge for about 2 hours.
7) If using strawberry sauce, pour it on cheese filling after about 2 hours.
8) Refrigerate overnight.

Serving Suggestions

Serve chilled.
