Description

Pazham(banana) pori (fry) is also called ethakka(banana) appam(bread). It can be called the snack of Kerala state. Usually all the tea shacks and restaurants, why even railways have this as their evening snack in their menu. Usually the batter used is all purpose flour(maida) and sometimes bengal gram flour. Since all purpose flour is considered unhealthy & bengal gram flour causes flatulence, i have used whole wheat flour & rice flour for the batter. The bananas used are native to kerala. These bananas are firm.Any other banana which is soft will not work.

Note

1) Use nicely ripe bananas, but at the same time should not be too mushy.
2) Ideally to get the native taste, fry in coconut oil. If the smell of coconut oil repels you, use any other oil.
3) I have used 3tsp.sugar, increase or decrease according to the sweetness of bananas.
4) A pinch of salt will bring out the sweetness.
5) Adding onion seeds are entirely optional,normally very few add it. I have added to give a light bite.
6) wholewheat flour can be substitued with gram flour. Whole wheat flour gives heaviness, whereas gram flour does not have that problem.

Method

1) Cut each banana, horizontally into two. Then cut each half into thin 3 slices vertically.
2) Make batter with all the ingredients given under "batter". Mix well without lumps. The batter should neither be too thick or too thin.
3) Heat oil.
4) Dip banana slices in batter and fry in medium hot oil till brown & crispy. Do not overcrowd oil with banana slices. Add a few slices at a time.
5) When done, remove to a kitchen towel. Serve hot.

Serving Suggestions

Serve hot with tea.
