1) I cooked pork in a pressure cooker. After 1st whistle, reduced flame & cooked for 20 minutes. If cooking without pressure cooker, add enough water & cook till done.
2) I used pork with a few pieces of fat.
3) For typical Kerala flavor, coconut oil is used. You can use any other oil also.
4) This pork dish was on the drier side. If you want it to be a little wet, after adding pork to onions, keep covered with a lid and keep stirring ocassionally.

1 Cup | Onions sliced finely | |

1 Tsp. | Fennel seeds | |
2 Tsp. | Garam masala powder |
1) Marinate pork with all the marinade ingredients for half an hour.
2) Then cook pork adding enough water till is done.
3) Heat coconut oil.
4) Add curry leaves and fennel seeds.
5) Then add onions and fry till translucent.
6) Add crushed shallots and garlic & fry till onion is golden brown in color.
7) Add chilli, corriander and turmeric powders.
8) Then immediately add pork, with the stock(if any) & mix well.
9) Then keep frying till pork is well fried and is almost blackish in color.
10) Lastly add pepper powder and garam masala powders. Mix well. Fry for a few minutes more.
11) Remove from fire.
Serve hot with rice.
