Description

Tandoor is a type of cylindrical clay oven, in which tandoori chicken and Naan ( leavened Indian bread), roti etc is traditionally prepared. Marinated chicken, meat, fish or vegetables are skewered on to the skewer and cooked in a tandoor. Breads/ rotis are stuck to the wall of the tandoor and cooked. Tandoor is heated by charcoal or wood which adds to the smoky flavour.
Here in this recipe, the roti is cooked on stove top on gas flame.

Note

1) In the absence of a stove top, heat a pizza stone in the oven at 250 degree celsius. Then keep the roti on this stone and for a minute or two. Turn and bake the other side.
2) The rolled out roti should be fairly thick.
3) Yoghurt can be replaced with buttermilk. Then add water accordingly.
4) Add water to the dough little by little, incorporating it into the dough as you go on.

100  Ml.Curd/ yoghurt lightly beaten
  Salt to taste

Method

1) Add ghee, curd, baking soda & salt to whole wheat flour. Mix well.
2) Add water little by little and knead to a soft pliable dough.
3) Cover with wet cloth and keep aside for about 30 minutes.
4) Then take out small balls of dough.
5) Dust rolling pin and bowl with wheat flour.
6) Flatten the dough ball & roll into thick roundels with a rolling pin.
7) Heat an iron griddle. Do not oil the griddle.
8) Apply water on one side of the rolled out bread and put the roti or bread (watered side touching the griddle) on the griddle.
9) Flip the pan immediately so that the top part of the roti cooks directly on open flame. Keep on adjusting the pan so that the roti cooks properly.
10) keep the griddle properly on stove and remove the roti from the griddle.
11) Apply 1 tsp. of ghee on roti.

Serving Suggestions

Serve hot with any gravied curry.
