Thoran, pronounced, "tho ran" is a coconut based vegetable stir fry dish. thoran is an integral part of a Kerala sadya(the traditional festive lunch). This dish is usually eaten with steamed rice. In this recipe, eggs are cooked in the same way as vegetables, with coconut.
1) Since eggs are naturally sweet & onions are also added to the dish, the end result is more on the sweeter side. To reduce sweetness, onion can be substituted with shallots.
2) Increase or decrease chillies according to your spice toleration level. I added a pinch of chilli powder to beaten eggs.
3) Coconut oil can be substituted with any other oil of your choice.
4) Overcooking eggs will reduce the creaminess of eggs.
5) I like onions to be fried till golden.

1) Coarsely crush coconut, cumin & green chillies.
2) Break eggs & add salt.
3) Heat oil.
4) Add onion & fry till brown.
5)Add turmeric powder & salt to taste.
6) Beat eggs with salt.
7) Add beaten eggs & scramble them.
8) When eggs are half cooked , add coconut mixture.
9) Mix well. Cook for 3 or 4 minutes till eggs are done.
10) Lastly add pepper powder.
Serve hot with rice, chapathy or bread.
