Papaya consists of a digestive enzyme called papain. Papaya in raw form is used as a meat tenderizer. The leaves, and green skin of raw papaya contain an enzyme called Papain. The connective tissue in the meat breaks down when it comes in contact with Papain. Pregnant women are advised from eating papaya as it is considered as inducing abortion.
1) Do not over- cook papaya. Overcooked papaya tastes awful.

1 Sprig | Curry leaves | |
1 Tsp. | Chilli flakes |
1) Peel and deskin papaya.
2) Wash well & cut into small cubes.
3) Cook papaya with salt and as little water as possible. Do not let it turn mushy(overcooked).
4) Heat coconut oil. Add crushed garlic, shallots, curry leaves & turmeric powder & fry till shallots & garlic are fried.
5) Add chilli flakes & let it fry till raw taste goes.
6) Now add cooked pappaya & adjust salt & mix well. Let it cook till a little dry & looks glossy. Remove from fire.
Serve with rice.
