Upma or Uppumavu or Uppittu is a popular breakfast dish, usually cooked with dry roasted semolina. In South Indian languages, 'Uppu' means Salt and 'Mavu' or 'Hittu' means flour. In North India, it is called Upma, short-form for Uppumavu.These days different types of upma, like, corn, wheat bread etc. are made. A good way to make use of left over bread.
1) Either brown or white bread can be used. Bread should be a day old. Or else it will crumble.

0.5 Cup | Onion chopped finely |
1 Tbsp. | Oil |
2 Tsp. | Ghee (clarified butter) |
1 Tsp. | Mustard seeds |
1 Tsp. | Cumin seeds |
1 Pinch | Asafoetida |
0.25 Tsp. | Turmeric powder |
2 Tsp. | Green chillies finely chopped |
1 Tsp. | Lime juice |
3 Tbsp. | Corriander leaves chopped fine |
Salt to taste | |
2 Tsp. | Ginger chopped finely |
1) Cut bread into cubes. Keep aside.
2) Heat oil and ghee.
3) Splutter mustard & cumin.
4) After mustard splutters, add onion green chillies & ginger. Saute till onion turns golden brown.
5) Now add boiled & cubed potatoes.
6) Add turmeric,salt & asafoetida.
7) Add bread & mix well.
8) Sprinkle some water over bread and cook for 2 minutes.
9) Add lemon juice & corriander leaves. Toss well to mix.
Serve warm.
