Description

Ragi is known as finger or red millet in English. Ragi plant is found in Asia & Africa. In India, ragi is mostly grown and consumed in Karnataka, Andhra Pradesh & Tamil Nadu. It was found in a study that women in Southern states of India had comparitively low incidence of osteoporosis. This was due to the consumption of ragi in these states. The grain is made into a fermented drink (or beer) in Nepal and in many parts of Africa. In Nepal this drink is known as Chhaang or chang. Ragi is rich in calcium, vitamins, minerals and fiber. In comparison to rice and wheat it is also quite high in protein.

Note

1) Add water only little by little.
2) Can be had as a snack or for breakfast. We had for breakfast.
3) If banana leaf is not available, pat the dough on the tawa, then keep on fire. Then make a hole in the centre, so it helps in cooking. Put the lid on. When done, turn & cook the other side. When doing the remaining adas, keep the tawa to cool a little, then pat the dough onto the tawa.

1  CupFinger millet flour
1  CupOnion chopped finely
1  Tsp.Ginger chopped finely
2  Tsp.Greeen chillies,chopped
0.5  CupCoconut, grated
  Salt to taste
0.75  CupBoiling water (approximate)
2  Tsp.Ghee
6  PiecesBanana leaves (7inch * 4 inch)

Method

1) Mix flour with onion, green chillies, ginger, coconut, ghee and salt.
2) Add boiling water( do not add the whole water at one go) little by little. Let the mix come together.
3) Take small balls of the mix and spread thinly on banana leaf, by wetting hand.
4) Heat a griddle/ tawa. Grease lightly.
5) Keep the pancake filled banana leaf on the griddle and cook till the leaf is browned. Press the pancake on top from time to time. when leaf is browned, turn and cook the other side. When both the sides of the leaf is browned, remove from griddle.

Serving Suggestions

Serve hot. Can be had on it's own or with chutney.
