Description

Browning butter gives a unique flavor to cookies.

Note

1) Take care not to over burn butter. Should be just browned.
2) Cookies should not be over baked.

1  CupBrown sugar /demerera sugar
0.33  CupSugar
2  No.sEggs
2  Tbsp.Buttermilk or milk
1  Tsp.Vanilla essence
2.25  CupsFlour
1  Tsp.Baking soda
2  CupsChocolate chips

Method

1) To brown butter,heat butter in a saucepan over medium heat, till butter just begins to bubble. Continue cooking butter on a low flame, stirring continuosly, till butter turns golden brown. When using take care not to use the browned sediments. Keep to cool.
2) Beat both the sugars and burnt butter till light and fluffy.
3) Add eggs and beat again.
4) Add buttermilk and vanilla and beat again.
5) Sift flour with baking soda. Add this to the butter mix and fold in till well blended.
6) Add chocolate chips and mix gently.
7) Pre-heat oven to 190 degree celsius.
8) Using an ice cream scoop, scoop out cookies onto butter/ greased tray. Flatten the top lightly.
9) Bake in the pre-heated oven for about 10 to 12 minutes, or till the edgese browned.

Serving Suggestions

Serve cookies with milk or tea/ coffee.
