Sev is made of gram glour and is used to top various snacks like bhelpuri etc. It looks like vermicelli and is crisp. Variations can be made by adding garlic paste, spinach paste chilli powder etc.
1) Kitchen press is somewhat like a potato ricer with a lot of different small plates with perforations of different sizes and shapes. Usually made of steel or brass.

1) mix oil, asafoetida, turmeric and salt with bengal gram flour.
2) Add water very slowly to make a stiff but pliable dough.
3) Fill the dough in a kitchen press. Use the thinnest vermicelli plate in the kitchen press.
4) Heat oil. Press out thin strands of dough into oil.
5) Deep fry on a slow flame till light brown and crisp.
6) Cool and store in airtight container.
Can be eaten as such or added in different recipes.
