Description

This is arefreshing salad ,specially in summers.

Note

1) If mango is very sour, reduce quantity accordingly.
2) As coconut milk is added, do not keep salad for too long.

CARROT AND MANGO SALAD WITH COCONUT MILK DRESSING
2  CupsCarrot, grated
1  CupMango, raw
  Salt to taste
1  Tsp.Green chillies finely chopped
0.25  CupShallots, finely chopped
Dressing
0.5  CupCoconut milk (thick)
2  Tsp.Coconut oil

Method

1) Peel and grate mango.
2) Mix carrots, mango, chillies and salt together and crush with hand.
3) Mix coconut milk with coconut oil and shake well to emulsify.
4) Just before serving, add the dressing and salt to the salad.

Serving Suggestions

Serve at room temperature or slightly chilled. Chilling for long hours will solidify coconut oil and coconut oil in coconut milk.
