This is arefreshing salad ,specially in summers.
1) If mango is very sour, reduce quantity accordingly.
2) As coconut milk is added, do not keep salad for too long.

2 Cups | Carrot, grated | |
1 Cup | Mango, raw | |
Salt to taste | ||
1 Tsp. | Green chillies finely chopped | |
0.25 Cup | Shallots, finely chopped | |
Dressing | ||
0.5 Cup | Coconut milk (thick) | |
2 Tsp. | Coconut oil |
1) Peel and grate mango.
2) Mix carrots, mango, chillies and salt together and crush with hand.
3) Mix coconut milk with coconut oil and shake well to emulsify.
4) Just before serving, add the dressing and salt to the salad.
Serve at room temperature or slightly chilled. Chilling for long hours will solidify coconut oil and coconut oil in coconut milk.
