Description

Dry mango powder is made and kept during summer months when sun and mangoes are available in plenty. This comes handy when mangoes go out of season. This powder gives tanginess to curries.

Method

1) Peel the skin of the mangoes.
2) With a peeler peel the flesh of the mangoes. This will give thin strips which will dry the mangoes faster. Or you can slice in a slicer. Grating is not a good option as the juice of the mangoes, which gives the tanginess will be lost in the process.
3) Dry mangoes in sun, ensuring not a drop of water falls into the mangoes. Sun them during day time, take them indoors in the evening and cover with a net or wire mesh. Mangoes should breathe. Or it will rot.
4) This process will take a few days, around 5 to 7 days.
5) When thoroughly dried powder and store in airtight glass jars.
