Averrhoa bilimbi tree is also known as bilimbi, cucumber tree, or tree sorrel. These small cucumber like fruits hang in bunches on the trunk of the tree. The fruits are sour and is used in fish curries in Kerala, Goa etc.
1) I substituted sultanas with seedless raisins.

1 Tbsp. | Ginger - garlic paste |
1) Cut bimblees in half lenghtwise.
2) Add salt (2tsp.) and keep aside for about 3 hours in a colander to drain off water from bimblees.
3) Heat oil in a pan, fry curry leaves.
4) Add ginger garlic paste and fry till done.
5) Add chilli powder and fry.
6) Add bimblees to the pan. Then add jaggery, vinegar and salt to taste. Let it through.
7) Remove from fire. When cool add to bottles.
8) Keep for about 3 to 4 days to mature before using.
Serve as an accompaniment with rice.
