These cookies are really chocolatey. Only die hard fans of dark chocolate are going to like them.
1) Sugar granules give a nice grainy texture to cookies. So dont substitute with castor sugar.

2 Tsp. | Baking soda / soda bicarbonate |

150 Gms. | Brown sugar /demerera sugar |
100 Gms. | Sugar |
2 Tsp. | Vanilla essence |
60 Gms. | Egg |
400 Gms. | Chocolate chips, dark |
1) Keep butter outside to soften.
2) Melt dark chocolate in microwave for 2 or 3, 30 second bursts.
3) Cream butter till soft. Then add both sugars and and beat to a creamy consistency. Then add melted chocolate after it is cold to butter and mix in well.
4) Add egg and vanilla essence and beat again. Keep aside.
5) Preheat oven to 170 degree Celsius. Line baking tins with buttered paper.
6) Sieve flour, soda bicarb and salt together.
7) Add this into the creamy butter mix and mix in gently.
8) Add chocolate chips. Fold in gently.
9) Scoop out a tablespoon of batter and place on the butter paper leaving half inch space in between. Flatten slightly.
10) Bake in a preheated oven for about 16 to 18 minutes.
11) Remove tray from oven and after a few minutes remove the cookies onto a cooling rack.
