Description

Otai is a fruit drink with origins in Polynesian countries. This cannot be entirely called a drink as the fruits are grated and mashed. So the fibre is intact like in a smoothie.Polynesia is a vast string of islands in the Pacific Ocean, including Hawaii, New Zealand, Easter Island, Tonga, and French Polynesia.
Now otai is more commony associated with Tongo. The modern version is usually a mix of coconut cream, shredded coconut and a variety of grated tropical fruits, most commonly watermelon, mango and pineapple, with watermelon being the most used in the Tongan Islands. Sugar is usually added to taste.

Note

1) Adding sugar or honey is entirely optional.

1  CupCoconut milk (thick)
3  Tsp.Lime juice
3  Tsp.Honey/powdered sugar
0.5  CupIce cubes

Method

1) Mash pineapple and watermelon with a spoon in a bowl.
2) Add coconut milk to this. Mix well.
3) Add lime juice and honey or sugar.
4) Add ice cubes to glasses. Pour the juice over it.

Serving Suggestions

Serve either chilled or over ice cubes.
