Description

Hindi word Aamras literally means mango (aam) juice (ras). Aamras is popular in Gujarati households during summer months when mangoes are in season. Usually Alphonso variety is used to make aamras. Alphonso is found mostly in Maharashtra and Gujarat. Locally it is known as"hapus" or "aapus". Alphonso is named after Afonso de Albuquerque,a Portugese military man. It is believed that Portugese introduced Indians to mango grafting. Alphonso has a unique color and flavor and is considered as the most expensive mango variety in India. These mangoes are exported to other parts of the world.

Note

1) Adjust sugar according to the sweetnes of the mangoes.
2) Some people add milk while blending mangoes.

Method

1) Soak saffron strands in a teaspoon of warm milk or warm water.
2) In a blender add mango pieces, saffron with water/ milk, sugar and cardamom seeds to form a smooth paste.

Traditionally aamras is served with puris in Gujarathi households.
