Description

Streusel is a German word. It is the crumbly topping of flour, butter and sugar.
Granny smith apple (green colored) is used for baking. It has a tart taste. If the apple is too tart, use some other variety. Granny smith is preferred as it does not become soggy soon.
The streusel topping gives a nice crunchiness to the cake.

1) This cake can only be made in a spring form tin as it cannot be upturned.

Method

Toasting Almonds:-
1)Pre-heat oven to 180 degree C. Add nuts to a baking tray and bake for about 8 minutes.
Streusel Topping;-
1) Combine flour, sugar and cinnamon in a bowl. Cut butter to small pieces. Add this butter into the flour using a pastry blender. Or you may use two forks or finger tips. keep aside.
Cake:-
1) Peel and core apples. Cut into slices. Keep aside.
2) Pre-heat oven to 180 degree C.
3) Mix flour, baking powder and salt together.
4) Beat butter and sugar together till creamy and fluffy.
5) Add vanilla and eggs and beat again till mixed in.
6) Add flour mixture in three additions, alternately with buttermilk (2 additions) and beat only till just combined.Start and end with flour.
7) Smoothen the top of the cake with the help of a spatula.
8) Arrange the apple slices evenly on top of the cake batter. Sprinkle streusel topping on top of the apple.
9) Bake for about 45 to 50 minutes or till a skewer inserted in the middle of the cake tin comes out clean. When piercing with a toothpick or skewer make sure you go till right at the bottom. Just piercing on top of apple may not give the correct state of the cake.

Serving Suggestions

Can be served warm also. Serve with ice-cream or whipped cream.
