Description

Barbecue sauce or as commonly known as BBQ sauce is a sweet sauce. This sauce is used for marinating, basting of barbecue meat or as filling in sandwiches.
The ingredients vary from country to country, but base ingredients include vinegar, tomato paste/ ketchup, black pepper, and sugar.

Note

1) You can substitute brown sugar with regular white sugar.
2) Smoking gives a nice flavor to sauce. If you cant smoke,ignore though there may be a slight difference in taste. In commercially available sauce, liquid smoke is used. Liquid smoke is produced when smoke made with certain wood chips passed through a tube from a combustion chamber to a condenser. In the condenser, the smoke cools and forms a liquid, with the addition of water.
3) I personally do not like the smoky flavor in barbecue sauce, hence prefer to make it without it.

2  Tbsp.Worcestershire sauce
1  Tsp.Tabasco sauce

For smoking
1  No.Charcoal
1  Tsp.Butter

Method

1) Mix all the sauce ingredients together and boil and cook for 15 minutes. Remove from fire.
For smoking:-
1) Heat charcoal over gas till red hot and place this in a metal bowl. Keep this bowl in the pan containing sauce. Add butter on top of charcoal. Cover the pan with sauce immediately. Keep aside for about 10 minutes. The pan will be filled with smoke giving the sauce a smoky flavor. Remove charcoal. Discard.

Serving Suggestions

Serve in sandwiches or as marinade.
