Description

This is a sweet and sour pickle. About the name of the pickle, there is no clear awareness about it. Probably it got the name from the fact that it was always served with bread and butter in a sandwich.
Some people are of the view that bread and butter pickles dates back to the year of depression in England, when cucumbers were preserved in pickled form and later used in sandwiches.

Note

1) Use English or Lebanese cucumber--they are dark green in color, less seeds and thin skin. If not available use ordinary cucumbers, but since it has lots of seeds it may not taste as the other cucumbers.
2) Since i did not have All spice berry, i substituted with one fresh all spice leaf. If not available, leave it.

6  Tbsp.Apple cider vinegar
4  Tbsp.Sugar
1  Tsp.Celery seeds
1  Tsp.Mustard seeds, brown
2  No.sCloves
1  No.Bay leaf
0.25  Tsp.Turmeric powder
2  Tsp.Salt
1  No.All spice berry / all spice leaf

Method

1) Cut cucumber into thick roundels.
2) Mix cucumber, onion and capsicum with salt and keep in a colander in the fridge for about 2 hours to let water drain.
3) Drain and wash vegetables thoroughly. Discard salt water.
4) Combine vinegar, sugar and all the spices. Bring to a boil.
5) Add vegetables and boil for 5 minutes.
6) Remove to a clean dry bottle, leaving half inch space at the top.
7) Let pickles mature for 48 hours before eating.
8) Keep in a cool dark place. Will keep for a few months, though the taste may vary slightly.

Serving Suggestions

Serve in a sandwich or as side dish with roasts.
