Tofu, from China is also known as bean curd, is a made by curdling soy milk and then pressing the resulting curds into soft white blocks. Tofu has a subtle flavor and can be used in savory and sweet dishes. It is often seasoned or marinated to suit the dish.
To refresh vegetables--After vegetables are blanched or boiled it is immediately dunked in ice cold water. This arrests further cooking immediately and also retains the bright colors of vegetables. Refreshing is especially important with green vegetables (such as broccoli, spinach etc.) when you want that bright green color but don't want to lose its natural crunch.
1) If you cannot find tofu, substitute with paneer.
2) Capsicum of any color can be used, if red is not available.
3) Vegetables should not be over cooked, but should remain crunchy.
4) Chilli sauce is available in supermarkets in green (green chilli) and red color (red chilli).
5) Cauliflower should be cut into bite size florets.

1) Clean and prepare vegetables.
2) Cut mushrooms in half. Cut babycorn lengthwise. Cut carrots diagonally into thin slices. Cut capsicum into square pieces. Cut onion into 4 and then seperate into individual pieces.
3) Bring all vegetables, except onion and capsicum to a boil. Dont over cook. Strain and refresh in cold water. This prevents further cooking of veggies.
4) Heat oil. Quickly fry tofu and keep aside.
5) In the same oil, add garlic and fry till it changes to golden brown.
6) Add onion and stir fry till transparent. Add ketchup, red chilli sauce, soya sauce, pepper and salt. Then add in vinegar and sugar. Immediately add one and half cups of water. Add salt. Let it come to a boil.
7) Now add all the vegetables including capsicum.
8) Mix cornflour in half cup water. Stir well and add to the gravy. Let it boil and become thick.
9) Just before removing from fire add fried tofu.
Serve with fried rice or noodles.
