Kebab is a persian word.It is a dish of pieces of meat, fish, or vegetables roasted or grilled on a skewer or spit. Kebabs are normally made in a tandoor. In the absence of tandoor it is baked or cooked on a tawa/ pan.
1) Each kebab was about 5 inch long.
2) As done for non -veg kebabs, dont baste with oil in between baking. It will make kebabs soft and will crumble.
2) Do not add too much oil while sauteeing veggies, the oil will then cook while baking and turn kebabs porous.
4) If the texture of kebab mix is not smooth, it will not stick on the skewer.
5) Cheese has salt, so be careful while adding salt.
6) Instead of baking , kebabs can also be cooked similarly on a tawa till brown in color.

1) Pre-heat oven at 180 degree C.
2) Grease a baking tray liberally with oil.
3) If using bamboo skewers, soak them in water for about 30 minutes to prevent burning. Oil the skewers well.
4) Heat oil in a non-stick pan. Splutter caraway seeds and then add ginger, garlic and green chillies. Saute for 2 minutes.
5) Then add all the vegetables.
6) Add turmeric powder and saute till the veggies are just cooked. Remove and keep aside.
7) Grind coarsely in a blender. Do not make into a paste. Set aside.
8) In a pan dry roast gram flour till it gives out a nutty flavor. Add cashewnut powder and the vegetables.
9) Then add pepper powder. Mix well and saute for about 5 minutes. The mixture should not be very dry. Transfer this mixture into a bowl.
10) Add garam masala and mix well.Add salt, cheese and potato.
11) Divide the mixture into equal portions. Wrap them around the oiled skewers tightly to make seekh kebab. Place the skewers on the greased baking tray and bake for about 10 minutes till brown in color. Then carefully turn around and bake for about 6 minutes.
Serve sprinkled with chaat masala and with green chutney.
