Poruthal ada is different from the normal steamed ada, as its cooked on a tawa or earthenware pot. It is not as soft as steamed ada, but has a different flavor as the banana leaves in which ada is made gets a few burnt spots.
1) Do not add the whole water to rice flour at one go. Add about three fourth qty from water, mix with a spoon and if flour is not wet, add rest of the water & mix with spoon.

1) Boil water with salt. Add to rice flour and mix to combine with a spoon.
2) Knead to a soft dough when its slightly cool.
3) Melt jaggery and strain to remove impurities.
4) To the melted jaggery, add coconut and cook till it becomes thick. Remove from fire. Add cardamom and dry ginger powder.Mix well.
5) Divide dough into 6 balls.Keep each ball on a square banana leaf and spread the dough with hands to form a thin pancake.
6) Add coconut jaggery mix on one side of the pancake and close the pancake with other side of the pancake. Cook this on a tawa or on a earthenware pot/tawa till the adas are cooked. Banana leaves will be roasted when adas are cooked.
Serve warm as evening snack.
