Description

Vada, also known as vadai ,is a savoury snack from South India. Vadas can vary in size, but are usually either doughnut or round shaped. They are made either from dal, lentil, gram flour or potato.

Note

1) Use fresh red chillies, which will give a nice flavor to vadas.
2) Shallots can be substituted with finely chopped onion.
3) Flatten vadas nicely, so that it wont break when fried.
4) Mix dal with other ingredients only just before making. Or the mix will turn watery from shallots/ onions.

3  CupsBengal gram dal
1  CupShallots, finely chopped
0.25  CupChillies finely chopped
2  Tsp.Ginger finely chopped
3  Tsp.curry leaves finely chopped
0.25  Tsp.Asafoetida
  Salt to taste
500  Gm.sCoconut oil

Method

1) Soak bengal gram dal in water for 2 hours.
2) Drain water completely. If possible keep the dal for about 30 minutes to drain off water completely. Or dry the dal on a kitchen towel.
3) Coarsely grind dal in a blender. It is okay if some dal remain whole. Do not grind to a smooth paste.
4) Add all the other ingredients, except oil for frying. Mix well.
5) Heat oil to deep fry fritters.
6) Take small balls of dal mix and roll in the palm of your hand and flatten gently to resemble cookies. Wet your hands lightly before rolling dal. Prevents sticking.
7) Fry shaped vadas till golden brown and crip.
8) Remove from oil and drain on kitchen napkin.

Serve hot.
