1. Preheat oven to 180°C/350°F.
2) Grease 2-3 baking sheets.
3) Sift the flour, baking powder and salt into a small bowl. Set the bowl aside.
4) With a hand-held electric mixer, cream the butter and sugars together.
5) Beat in the egg and vanilla essence.
6) Add the flour mixture and beat well on low speed.
7) Stir in the chocolate chips and cashew.
8) Drop teaspoonfuls of the mixture on to the prepared baking sheets, to form 2 cm / 3/4in mounds. Space the biscuits about 5 cm/2 in apart to allow room for spreading.
9) Flatten each biscuit lightly with a wet fork. 10) Bake for 10-12 minutes, until golden brown.
11) Transfer the biscuits to a wire rack and allow to cool.
Serve with tea or milk.
