Description

Adobo means "marinade," "sauce" or "seasoning" in Filipino. This is a popular dish in Philippine cuisine that uses meat, seafood, or vegetables marinated in vinegar and garlic, browned in oil, and simmered in the marinade. It is even considered as the unofficial national dish of the Philippines.

4  Tbsp.Vinegar (or coconut vinegar)

Method

1. In a large container, combine soy sauce and garlic, with chicken then marinate for at least 3 hours or up to 24 hours in refrigerator.
2. Heat oil in a large pan on medium heat.
3. When the oil is hot, place the chicken on the pan and brown all sides. Keep chicken aside.
4. Pour in the remaining marinade of soya sauce and garlic. Add the water and bring to a boil.
5. Add bay leaves and peppercorns. Add the chicken back and simmer on medium-low to low for 40 minutes, or until tender. Do not let it come to a hard boil.
6. Stir in vinegar and shake the pan around to disperse it. Simmer for another 10 minutes, or until tender.

Serving Suggestions

Serve hot.
