Description

Young chow (Cantonese ) or Yang zhou (Madarin), is the name of a city in China. The ingredients of this fried rice may vary, but some of its staple items are--1)Cooked rice (preferably 1day old), 2)diced barbecued cha shao/char siu pork, 3) Scallions / spring onions , 4)fresh vegetables such as kai-lan, carrots, peas, corn, bamboo shoots, etc., 5) egg
6) green peas,7) Shaoxing wine/ chinese rice wine etc.
Some western Chinese restaurants also use soy sauce to flavor the rice, and add meat such as chicken.

Note

1) For chinese fried rice, cooked rice,preferably a day old is used,as freshly cooked rice is sticky.
2) Non alcoholic substitute for rice wine is white grape juice. Alcoholic substitute is sherry.

Method

1) Dry the prawns and cut the meat into small dice about the same size as the peas.
2) Lightly beat the eggs with a pinch of salt and a few bits of the spring onions.
3) Heat about half of the oil in a preheated work, stir-fry the green peas, prawns and meat for about 1 minute, add the soy sauce and wine.
4) Remove and reserve.
5) Heat the remaining oil and lightly scramble the eggs.
6) Add the rice and stir to make sure that each grain of rice is separated, then add the remaining salt, spring onions and the cooked ingredients (prawns, meat and peas). Mix well and serve hot.
