Thinly cut beef strips are fried and mixed with carrots in a sauce.
1) Use beef which cooks fast. If you are not sure about the quick cooking of beef, then cook beef till almost done and then fry.
2) Carrots will shrink in size after frying, so don't cut them too thin.

1) Thinly cut the beef into matchstick shreds. 2) Make a batter with the egg, salt and corn flour, then coat the shredded beef with this batter. Mix well.
3) Heat oil. Deep-fry the beef in hot oil stir to separate the pieces, remove and drain.
4) Deep-fry the carrots till just done.Pour off excess oil, leaving about 1 tablespoon in the work or pan, add the spring onions, garlic and chilli, stir-fry for about 1 minute, now add the sugar, vinegar and soy sauce with the beef and carrots.
5) Mix well so that each beef shred is coated with the sauce. Serve hot.
Serve hot with fried rice or noodles.
