Description

Shirred eggs ,also known as baked eggs or oeufs au plat a la creme (French word which means eggs baked with cream) is a dish in which eggs have been baked.The name originates from the type of dish (flat bottomed dish) called shirrer. Eggs are served in the dish in which it is baked. Instead of a single dish for cooking all the eggs, individual bakeware or ramekeins can be used.

Note

1) I used chinese cabbage. You can use either one or more than one leafy vegetables.
2) Bacon can also be added while baking the leaves.
3) If the dish is not large enough to hold 4 eggs, divide into more than one dish. Adjust baking time accordingly.

Method

1) Heat oven to 180 degree Celsius.
2) Add butter to a shallow oven proof dish. Keep in the oven to melt for about 5 minutes. then take out.
3) Add spinach / cabbage and bacon and add salt and pepper to taste.Bake for about 10 minutes till it is wilted.
4) Take out and add cream, season with salt and pepper. Bake for another 5 minutes.
5) Break all the eggs into the dish, pour a little of cream on top of eggs and bake for 10 to 15 minutes or until egg whites are set
6) Add nutmeg and chilli flakes and spread cheese on top and bake for another 3 minutes.

Serving Suggestions

Serve with toasted bread while still hot.
