Description

1) This cookie dough uses wholewheat flour instead of maida / all purpose flour & hence is healthier.
2) Brown sugar is produced by extracting the juice from sugar cane & is not refined or bleached. It is commonly used in baking and to sweeten coffee and tea. This sugar is typically sold as demerara sugar, after the Demerara colony in Guyana.

Note

1) Use any neutral oil like rice bran, olive, virgin coconut oil etc.
2) If you want chewy cookies instead of crisp ones reduce baking time to about 15-20 minutes.
3) You can use ice cream scoop to scoop out the cookie batter onto baking sheet.

100  Gm.Brown or demerara sugar powdered
0.25  CupOil
1  Tsp.Vanilla essence

Method

1) Pre-heat oven to 180 C and line cookie sheet with butter paper.
2) Whisk together eggs, sugar, oil and vanilla in a bowl.
3) Mix all the dry ingredients together.
4) Add the dry ingredients to the wet and mix it in with a spatula.
5) Drop one tablespoon of dough onto the cookie sheet leaving about 1 inch space between 2 cookies. cookies will spread on baking. Bake for 25-30 minutes.
6) Cool in the tin for 5 minutes and then on the wire rack till cooled completely.
7) Store in an airtight tin for a week. If kept in fridge , can be stored longer.

Serving Suggestions

Serve as it is or with milk, tea or coffee.
