Guacamole prounounced as Gu-ha-ca-mol, is a light green chutney made from avocados. Avocado is also known as butter fruit in some parts of the world. When ripe the skin of avocado turns brown in color. Only ripe avocados are used to make guacamole. To ripen avocados, keep them in brown paper bags.
1) Do not use Avocados that are not ripe. It is safer to buy ripe, brown colored Avocados.
2) Do not over mix Guacamole. Best Guacamole always has a little chunky texture to it. Mix it till only flavors are combined, leaving some chunks.
3) To prevent oxidation, some people suggest leaving the Avocado stone inside the Guacamole till serving time.

1) Cut the ripe avocado in half. Remove the stone. Scoop out the pulp with a spoon. Mash pulp with a fork.
2) Add the remaining ingredients. Mash again with the back of a fork.
3) Cover with cling film (cling film should be directly on the surface of the guacamole)` to prevent oxidation by air reaching the surface. Refrigerate until ready to serve.
Serve with Quesadillas.
