Description

Molten lava cake (also known as chocolate fondant or soft centered chocolate cake) is a gooey chocolate cake served warm as dessert with vanilla ice cream. Its good to bake this in individual ramekeins /bowls.The gooey chocolate will flow like lava when cut.
A ramekin is a small glazed ceramic or glass bowl used for cooking and serving various dishes. Pronounced , 'rami kin', it is a French word. In individual small ramekins one serving of food is served.

Note

1) Will keep for 3-4 days in the fridge, covered, after baking. Reheat lightly before serving.
2) For a double boiler/bain marie--select a large bowl & fill with 1-2 inches of water & place it over low to medium heat. Let water simmer. keep a bowl larger than this bowl & place on top. The bottom of the top bowl should not touch the simmering water. Place chocolate in the top bowl & stir until melted.
3) This batter can be stored a week in the fridge. Bring to room temperature & then bake.

1  No.Egg yolk
50  Gm.Sugar
2  Tbsp.Flour
1  Tsp.Vanilla essence
1  Tbsp.Flour for dusting

Method

1) On the top of a double boiler set over simmering water, heat the butter and dark chocolate until chocolate is almost melted.
2) Beat the egg, yolk and sugar with a whisk or electric beater until pale yellow and thick.
3) Beat together the melted chocolate and butter. It should be quite warm.
4) Pour in the egg mixture, then, quickly beat in the flour, just until combined.
5) Butter and lightly flour two moulds, ramekeins or oven-proof coffee cups. Tap out the excess flour and divide the batter among the moulds. (At this point, you can refrigerate the batter for several hours until you are ready to eat. Bring to room temperature before baking).
6) Preheat the oven to 200c & bake for 08-10 minutes. The centre will be soft, but the sides will be set. Do not over bake. It will take away the gooeyness of the cake. The cake will deflate lightly after being baked, it`s okay. Invert each mould onto a plate and let it sit for 10 seconds. Unmould . Serve immediately.
